Marvin Woods’ Slow-Roasted Crispy Duck

Slow-Roasted Crispy Duck1 - 4 to 5 lb. duck
˝ cup honey
2 tablespoons soy sauce
Sprinkle of salt and pepper
1 teaspoon Chinese 5 spices
Preheat oven to 250. Using honey, soy sauce, salt, pepper and Chinese 5 spices, make a rub and spread on the duck. Place duck on a roasting rack with a pan underneath pan to catch the oil that drips to the bottom. Turn the duck on its side every 40 minutes over six hours. Cooking at a low heat allows the duck to cook slowly and the natural fat from the duck to flavor the meat.
Tip:
"What I say to people all of the time is the more you practice the better you'll be at cooking. That's not something you take lightly. A lot of people say they want to be better. I ask them, 'How much time do you put in the kitchen? How much time do you experiment?' That's important because if you don't do that you're going to be stuck."
